This is the best and easiest side dish when the grill is on, or you could even make them in your oven or broiler at home.
Ingredients:
- As many sweet mini peppers as you like
- Any type of mozzarella cheese (quantity to your taste)
- Basil leaves (as many basil leaves as peppers)
- 2 teaspoons extra virgin olive oil
- 2 teaspoons balsamic vinegar
- Salt to taste
(You could add minced meat if desired)
Method:
- Stuff mini peppers with mozzarella and basil
- Cook on grill, in oven, or under broiler (if oven, set to 200 C (400 F))
- Cook until the cheese is melted and peppers have browned and softened, about 5 to 10 minutes.
- Sprinkle with salt to taste, let rest for a few minutes before serving.
