This is the best and easiest side dish when the grill is on, or you could even make them in your oven or broiler at home.

Ingredients:

  • As many sweet mini peppers as you like
  • Any type of mozzarella cheese (quantity to your taste)
  • Basil leaves (as many basil leaves as peppers)
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • Salt to taste

(You could add minced meat if desired)

Method:

  1. Stuff mini peppers with mozzarella and basil
  2. Cook on grill, in oven, or under broiler (if oven, set to 200 C (400 F))
  3. Cook until the cheese is melted and peppers have browned and softened, about 5 to 10 minutes.
  4. Sprinkle with salt to taste, let rest for a few minutes before serving.
